Dog Spike can still talk and form complex thoughts, so he's still a person to those who know his true nature. Also, Spike isn't a pony which seem to be the equivalent of humans on their side of the mirror, so it would make sense for Spike to become something non-human. It would also give different implications for Twilight to be carrying a little kid around school with her. Besides, dragons are viewed more as monsters than people in Equestria anyway.

As for the skin colours, the technicolour humans are just as natural as the technicolour ponies.
